Citrus-Infused Vinegar
“I take advantage of clementine season every winter to create a citrus-infused cleaning vinegar. I start with a large mason jar filled ¾ with white vinegar. As we eat our way through boxes of clementines, the peels are added to the jar. Be sure the give the jar a shake each time you add more peels. After a week, the vinegar becomes infused with the citrus oil, imparting their fresh scent. Strain the peels out and reserve the vinegar.
